This Southwestern Chicken Fajita Mason Jar Salad is a super easy to make, nutritious, and delicious lunch that you can make ahead of time and keep in the fridge for 3-5 days!
I'm a huge fan of food prep, although it was tough getting started at first. And now that I'm a new mom, I'd rather spend any extra time I have cuddling with my baby or taking a nap. However, I know that the couple of hours I put into meal prep will make the rest of the week that much easier!

I absolutely adore mason jar salads because I can make several ahead of time, store in the fridge, and either throw them into my husband's lunchboxes or pour onto a bowl and eat while I have my baby attached to my hip.
