It feels so great to breathe in dust-free air. The cleaners came yesterday and cleaned 4+ months of filth. I was incredibly embarrassed when they had to scrub and labor intensively for hours on end. Eeks! I may like to cook but I sure don't like to clean. Therefore, I happily designated it as the Hunryman's job. He's a lot more organized (borderline obsessive) and has his particular way of doing things like folding laundry. I told you we're a match made in heaven ;). However, since he's been working a lot more than usual due to the new position he took at work, the Swiffer mop has been stationary and the mounds trails of crumbs are multiplying. Apparently I'm a messy eater. I even contemplated whether or not I should put Kona, my dog and personal vacuum cleaner, on top of the kitchen countertop to get rid of any food particles so that I wouldn't have to lift a finger..but that wouldn't be so sanitary now would it? I'm not that dirty. Lazy? Yes.
Anyway, what's important is that the house is now spotless. The kitchen was especially inviting so I decided to made cookies. No worries. I made sure to wipe down the countertop. This won't last long...
This cookie totally happened by accident. The Hungryman and I were out shopping when we passed by a cookie stand. He wanted cookie cake. I told him he could either get a slice of cookie cake now or wait till we got home where I would bake a fresh batch of homemade cookies. What a sweet wife I am! 😉 Well, needless to say, he enthusiastically went with option #2. I thought I had all the ingredients, but when it came time to add the vanilla extract, I came to the realization that I had run out. Hello, panic mode. Luckily, I had almond extract, so I thought what da heck. It was worth a shot.
While the Hungryman does not like whole wheat cookies, he was blown away by this one! Upon first bite, he said it tasted just like an amaretto cookie. That was totally not my intention, but we were onto something. He also thought that the earthiness and the denseness of the whole wheat was very appropriate for this cookie.
Buttery. Slightly crispy on the outside, chewy on the inside. That's the kind of cookie we like. Make this cookie and share with the whole world! Who doesn't like a home-baked cookie? 😉
Ingredients
- ½ cup unsalted butter softened
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar
- 1 egg
- 2 teaspoon almond extract
- ¾ cup whole wheat flour
- ¾ cup old-fashioned rolled oats
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon baking powder
- ½ teaspoon baking soda
- 1 ½ cups semi-sweet chocolate chips
Instructions
- Preheat oven to 375 F. Sift together flour, oats, cinnamon, salt, baking powder, and baking soda in a medium bowl.
- Beat butter and sugar until light and fluffy. Add egg and almond extract and beat again. Add dry ingredients gradually. Be careful not to over mix. Fold in chocolate chips.
- Refrigerate dough for at least 30 minutes.
- Using a small ice cream scooper, scoop dough onto baking sheet lined with Silpat or parchment paper. Place in oven and bake for about 10-12 min, or until edges become lightly browned. Let cool on a wired rack.

Just baked a batch. YUM! I used half all purpose flour and half buckwheat as I do not have whole wheat and they turned out perfect. Thanks much for sharing Min!
Min says
Hi Kris! Yay! I'm sooo glad you liked it! Ooh buckwheat...I'm going to have to try it next time. Thank YOU for sharing ^_^

Apparently I'm obsessed with making cookies, and the scale is showing this. However, since I've found these, they are okay, right? Whole wheat = healthy.
Can't wait to try these!
Min says
Haha! Yes..you can feel better about eating these cookies ;). But not too many though haha

Min, I love everything about these cookies, whole wheat, amaretto and chocolate, yum!
Ellie@Fit for the soul says
Yummmmmmmmmmmmmm I want these right now!!! It doesn't help that my sweet tooth has been raging lately, either 🙁 It is amazing how much one little ingredient makes something taste so different huh? I figure that almond extract is also really strong, so it can do wonders in a recipe. I love my cookies wayyyyyy crispy on the edge! Greg loves them chewy gooey middle, so when we share it's like we're a match made in heaven too, lol.

Love love love these! I have to try them! Maybe I'll just use vanilla extract instead since I don't have almond extract... but then I suppose I can always buy almond extract one day! And how cool is it that you decided to add almond extract and you get the amaretto taste!! : ) and, I'll be honest, I've never tried baking with whole wheat flour, but I really should do something about my diet!! thanks for the recipe dear Min! xoxo, Felicia
Lisa@ Cooking with Curls says
I think we are programmed to like cooking or like cleaning, I don't think you can have both 🙂 I would have gone to the store and never even thought to add almond! You are a genius Min!
Shannon {Cozy Country Living} says
Oh my gosh- these are right up my alley! They look delicious:) I cannot wait to try these!!
Stephanie @ Steph Loves Cake says
Popping over from Tasty Tuesday. This recipe caught my eye right away with the amaretto in the title 🙂 I have just pinned this recipe to try soon. Thank you for sharing!
The Brussels Cook(er) says
These sound absolutely delicious Min! And so far I've been too "scared" to use whole wheat flour to bake cookies with - but I'm DEFINITELY going to give these a try!
Min says
You should DEF experiment with using whole wheat flour in your baking! You will be pleasantly surprised 😉
Laura@bakinginpyjamas says
I love almond, these sound delicious. What a happy accident you had not having any vanilla.

Holy smokes these look perfect! I'm a big {BIG} fan of amaretto! Pinning now!

Haha, I am the one stuck with cleaning. My boyfriend won't do it. Well, every once in a while he will vacuum or sweep the floors but dishes and laundry are things he won't touch. I keep thinking about hiring a cleaner to come once or twice per month to do a deep clean of our house, you know, get the stuff that I don't always get to!
Loving these cookies, Min! Pinned and sharing on FB and Twitter. Thanks for sharing at Marvelous Mondays!
Krista @ joyfulhealthyeats says
haha... I am so with you on the cleaning Min! It is my least favorite part, especially the bathrooms. Yuck! I need to have the cleaners come in a for a deep clean soon. These cookies look awesome... so pinning this and making it soon. Thanks for sharing at Show Stopper Saturdays Min!

I have cleaners coming to my house this week. I'm so excited that I'm worried I'll pee my pants. (And make more work for them.) I can't even tell you how much I'm looking forward to eating off the floors.
Those cookies look positively amazing.
Min says
Haha! Yes, I can relate. I'm absolutely loving being at home right now. Although I found out that one of the bathrooms wasn't cleaned...boo. That's ok. I got my husband to clean it ;).

It's Saturday night and I'm sitting in front of computer to catch up some work... I totally deserve this cookie (the biggest one!). 😀 Love that you used almond extract in the cookies. I only use for waffles and pancakes but will try on cookies next time!
Min says
I'm slightly regretting my decision to not do anything yesterday as I'm feeling quite overwhelmed this morning. But that's ok..I enjoyed spending time with my husband as it's been a while. And yes, you def deserve the biggest cookie! Each cookie is 5 bites at most so perhaps use a bigger scooper? 😉 I've used almond extract before to make lemon blueberry cookies and that was fabulous! When I tasted these cookies, I was so thankful for my empty bottle of vanilla 😉
Tracy says
Your cookies look delicious! I'd love to have you share this or any of your amazing posts at our weekly Super Saturday Link Party. It starts Friday's at 6pm, hope we see you there!

I think cookies are a perfect way to celebrate a clean house 🙂 And you make me feel so much better about my own sub-optimal cleaning! I am a neat and organised person so our house always looks tidy, but I am not good at the 'big' cleaning jobs like scrubbing grout, or vacuuming behind the sofas, or cleaning windows. I need a twice yearly cleaner to do those things I think!
Min says
You sound just like Tim. He is super neat and takes organization to a whole new level, but he doesn't like doing all those things you've mentioned. I'm hoping he will change bc there's no hope for me haha.
Gloria // Simply Gloria says
Oh do I know the panic mode of running out of vanilla. It's always in the cupboard...so why would I remember to pick it up at the store when I run out. (I always forget.) And, I go through it like crazy! Love these cookies...your hungryman made the right choice! Pinned!
Min says
Exactly! This has happened to me many times before, and I still haven't learned my lesson. Good to know I'm not the only one ;). Thank you and hope you try these cookies!
Laura @ The Rookie Cook says
Oh yummy, can you ship me some??
And yes, you are a sweet wife! I like to bribe my husband with things like that too - although only because I know that if I make it at home it will be cheaper and mainly because we'll have ALOT more!! (More is always better when it comes to desserts, right??)
Pinning!
Min says
Haha I would but then you won't get to taste it when it's warm and ooey gooey. Good stuff ;). And I'm with you. I don't want to pay $2 for A cookie when I can make a dozen or more with all the ingredients I already have on hand!
Lisa @ Crazy Adventures in Parenting says
Ohhhhh you are evil. And I love you.
Min says
Haha. Thank you, Lisa! I am evil, aren't I? But I made them a bit healthier by using whole wheat flour if that helps 😉
Serena says
Look at how you captured the melty chocolate with your camera! Awesome! I'm making these Sunday... We have a church pot luck. And my sister always puts almond extract in her chocolate chip cookies - I forgot til now!
Min says
Hehe I know! I was super giddy and excited when taking these photos ;). Cookies are so much fun to photograph! Now I want to bake more just so I can practice haha. I didn't have to worry about them getting cold and looking unappetizing. Your sister was def onto something bc I just found my new fav chocolate chip cookies ;).
Kevin @ Closet Cooking says
I really like the use of the almond in these ccc's!
Min says
These cookies were truly special, thanks to the almond extract. What a difference a simple substitution can make!
