Happy Memorial Day!! To those who have bravely fought for our freedom, I want to say thank you! We celebrate today in remembrance of you.
Hungryman and I don’t have anything planned for today, and we kinda like that. These go-with-the-flow days come around once in a blue moon for us so we went to bed last night feeling quite excited. Yup, we sure are easily amused ;). Besides taking a stroll around the park with our sidekick, Kona, I would like to stay in my pjs all day and catch up on all of our recorded shows. But of course, something always seems to come up, so we shall see how the day unfolds…
As for eats, I am thinking of repeating last night’s tacos. It is a holiday after all, so this body deserves a rest ;).
Tacos…thank you for entering the food scene. Sure, you taste amazing. But more importantly, I cherish your ability to turn any leftover into a delicious, fun, and casual meal. What? You mean you don’t talk to your food? 😉
Tacos are definitely my go-to weekday meal. Chances are, I have some leftover meat and pre-sliced veggies in the fridge looking terribly bored, so rescuing them is not a problem! Plus, it gives me an excuse to eat more tortillas..corn that is. Yup, I’m that girl that has to be difficult and order a side of corn tortillas while everyone is more than happy with the traditional flour ones. It is true that corn tortillas are the healthier option, but that’s not the main reason why I eat them. I’m drawn to their dense, slightly sweet, hearty, and corn-y (I thought long and hard about this one, believe it or not) taste. Anyway, whatever shell (as my Tex-Mex obsessed Italian brother-in-law living in Buffalo, NY likes to call it) you decide to choose, be sure to fill it with this chipotle marinated chicken. Preparing the chicken is the most time-consuming part. The rest will come together in a breeze. I promise!
Chipotle Marinated Chicken TacosPrint Pin
- 2 chicken breasts from this recipe
- 4-6 corn tortillas
- 1 teaspoon olive oil
- 1 onion (yellow or red), sliced
- 1 red bell pepper, sliced
- avocado, cilantro, salsa, shredded cheese, lime nuice
- Slice onion and bell pepper. Grill in oil. Cut chicken into bite-sized pieces. Grab a corn tortilla and start building your taco!
Grill the veggies. Don’t you just love caramelized onions? The aroma. sweetness. all of it!
Use whatever salsa you like. I chose this Mango Peach Sauce from Wild Harvest, one of my favorites.
Toppings: cilantro, cheese, salsa, avocado, and whatever else your stomach desires!
I probably could have eaten all 3 of them, but I was comfortable and happy after 2. Hungryman prefers flour tortillas so I, while muttering objections under my breath (apparently I do this a lot..oops), gave in to his wishes. I dream of the day when I no longer have to buy two types of tortillas…one of these days…
