Pork Tenderloin with Spicy Peach Sauce

Ingredients
  • Marinade
  • 1 cup peach preserves
  • 1 Tablespoon honey
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon sriracha sauce
  • Meat
  • 2 Ibs pork tenderloin
  • 1 teaspoon canola oil
Instructions
  1. Prepare pork by removing silver skin.
  2. Whisk together preserves, honey, soy sauce, and sriracha in a bowl.
  3. Place cleaned pork in a ziplock bag and pour half the marinade over. Let it marinate in the fridge for 2-4 hours.
  4. Preheat oven to 350 F when pork is almost ready.
  5. Heat oil in a grill pan over med-high heat and cook/sear the pork, approx 5 min on each side, or until browned. Using tongs, sear the sides as well.
  6. Bake in oven for approx 15-20 min, or until thermometer reads 145 degrees. Let pork rest before slicing.
  7. Meanwhile, bring remaining half of marinade to a boil over med-high heat then simmer for approx 10-15 min, or until reduced slightly.
  8. Slice pork and spoon sauce on top.
