Friday Foodie Favorites – a collection of this week’s favorite healthy recipes from Healthy Aperture and fellow Blog Brûlée attendees.
I can’t believe it’s Friday!! But then again, I’ve been saying that every week for a while now, so I guess that’s just how it’s going to be. In any case, let’s get right into my favorite recipes of the week:
First of all, I just wanted to publicly wish my dear friend, Healthy Aperture a Happy 3rd Birthday! Gosh, how thankful I am that you were born. And I’m pretty sure I’m not the only one who feels this way. Let’s help celebrate with these Wild Blueberry-Orange Blossom Honey Cupcakes.
Mexican Breakfast Pasta | Living Well Kitchen – A perfect way to use up leftover pasta! Throw in some veggies, poach a couple of eggs and you’re good to go! Breakfast anytime of the day ;).
Spaghetti ‘N Eggs with Tomato Paprika Sauce | Cape Fear Nutrition – I guess I’m really digging these nested eggs. With a lightened-up cream sauce and packed with veggies and flavor, this dish is a perfect quick & easy weeknight meal.
Sweet Potato Goat Cheese Quiche | The Law Student’s Wife – As we enter the holiday season bound to be filled with entertaining and hosting, I’m constantly on the lookout for delicious make-ahead recipes. This quiche with caramelized onions and rosemary would have guests oohing and ahhing!
Vegan Green Goddess Dressing | The Foodie Dietitian – Yes, I eat a salad of some sort every single day. One way to save myself from salad burn-out is by adding different dressings that can be whipped up in seconds. This one is completely dairy-free, and Kara suggests you serve it over a kale salad, sweet potato, or even use as a dip!
Pumpkin Hummus | The Muffin Myth – I love hummus. And pumpkin has been my life as of late. So how come I’ve never thought to add the two together? Ingenious! Can’t wait to make this.
Roasted Delicata Squash with Parmesan & Walnuts | Marisa Moore Nutrition – I’ve been seeing delicata squash (now I know the name of the large squash with dark green lines on the skin) at the farmer’s market but haven’t purchased it yet. That’s going to change this weekend.
Easy Layered Dip with Sweet Potatoes | MJandHungryman – I made this dip last week to be enjoyed while watching the Red River Showdown between UT and OU. Rather than using refried beans, I replaced the classic layer with a sweet potato/bean mixture.
Baked Apples Stuffed with Oatmeal Cookie Granola | Immaeatthat – Kylie always comes up with the most ingenious baked creations, and this one is no exception! I shall be stocking up on apples, and they are going to be overstuffed just the way I like them.
Grain-free and Vegan Apple Crisp | Texanerin – Vegan, grain-free, and dairy-free aren’t the words that you typically associate with apple crisps, but that’s what Erin brings to the table. Sweetened solely with maple syrup, this is a guilt-less yet totally satisfying treat.
When is it worth it to splurge on unhealthy food? | An Avocado A Day – When I tell people that I’m a registered dietitian, they immediately jump to conclusions about my eating habits. Sure, I eat clean most of the time, BUT I also don’t like to feel deprived. If I want some ice cream (my ultimate weakness), I’m going to have the REAL stuff, not the low-fat version that leaves me feeling unsatisfied and downright grouchy. It’s all about balance, and this can become especially difficult when traveling.
