PREP
In a large bowl, combine all the dry ingredients
WHISK
In a medium bowl, whisk together the wet ingredients
COMBINE
Combine the wet and flour mixture together
MIX
Fold in the strawberries
MAKE
Drop 2 tablespoons up to ¼ cup of pancake batter into the pan.
First thing - bring eggs and milk to room temperature. Be sure to mash the bananas well! Do not over mix! Gently fold the dry and wet ingredients until just combined. Let the batter rest for at least 5 minutes before cooking. Wipe out the pan between batches. Don't rush it!
While delicious as is, you can top these pancakes with maple syrup, fresh fruit, jam, date syrup, yogurt or peanut/nut/seed butter (thinned out for babies)
