Preheat oven to 300° F. Line a large baking sheet with parchment paper. Set aside.
In a large bowl, combine oats, flaxseed, coconut, almonds, and cinnamon. Stir to combine. In a small bowl, whisk together coconut oil, maple syrup, and vanilla. Pour over dry ingredients. Stir until well-coated.
Pour the granola mixture onto the baking sheet. Spread into an even layer. Spread mixture evenly onto a baking sheet. Bake for 40-45 minutes or until granola is golden brown, stirring every 15 minutes.
Allow to cool completely. Stir in the strawberries.
