Add strawberries to a blender and blend until smooth. If using frozen strawberries, let it thaw for 10-15 minutes before blending. Add a splash of water if needed.
In a large bowl, add the yogurt, strawberries, lemon juice, vanilla, and lemon zest if using. Stir with a spoon until well combined. Taste and add some honey or maple syrup if it's too tart.
Notes
I like to store ½ cup portions in small airtight containers. That way I can easily grab one from the refrigerator in the morning along with various toppings. It will keep in the refrigerator for up to 5 days.
