Cook pancakes and allow them to cool completely on a cooling rack. Do not stack them on top of each other. Otherwise they will become soggy.
Once cooled, place in a single layer on a cookie sheet or plate. Line with parchment paper for easy removal and clean up.
Place the tray in the freezer for at least an hour, until the pancakes are frozen solid. Remove and place in freezer bag or airtight container for storage! Be sure to label with the date (I like to add the best by rather than when it was made).
