Curry Chicken Avocado Salad

EASY, healthy curry chicken salad with avocado and vegetables for babies, kids, and adults! It's high in protein and perfect for a quick lunch at home and school lunchboxes.

Ingredients

  • 1 cup (100g) shredded chicken
  • 1 medium avocado, mashed
  • 1 tablespoon Greek yogurt
  • ½ teaspoon curry powder
  • ¼ teaspoon garlic powder
  • 3 tablespoons finely chopped cucumber
  • 3 tablespoons finely grated carrots
  • 1 tablespoon lime juice

Instructions

  • Combine all the ingredients in a bowl. Taste and feel free to add more yogurt, lime juice, curry powder, or veggies to your liking!

Notes

Can keep in the fridge for 1-2 days. But do keep in mind that just like guacamole, it will turn brown after a few hours from oxidation when exposed to air. You can add more lime juice to help slow down the browning and cover with plastic wrap directly on the surface of the salad to keep the air out.
But even if it does turn brown, it's still fine to eat.
