3medium peaches (around 1 ¼ pound) , sliced and frozen
½mediumbanana, frozen
½cup (115g) plain whole milk Greek yogurt
2teaspoonsfreshly squeezed lemon juice
Instructions
Add all the ingredients to a food processor/blender. If using a blender, add the yogurt and lemon juice first, followed by the frozen peaches and banana.
Blend until the yogurt is thick and creamy. If using a blender, start on low speed then increase to its highest speed. Be sure to use the tamper that comes with it to press the ingredients down towards the blades. If using a food processor, scrape down the sides as you go.Note: Don't blend for too long. Otherwise, the yogurt will get too soft and start melting.
Serve immediately for soft-serve consistency. You can also transfer to a shallow freezer-safe container and freeze or add to popsicle molds.
Notes
Note that if you freeze overnight, the yogurt will harden completely. You will need to let it sit at room temperature for it to become scoopable.
You can use any non-dairy alternative! Be sure to look for Greek-style for the thick consistency.
