Southwestern Cheese Dip
Servings 6 -8
- 6 oz. shredded cheese I used Cabot Pepper Jack
- 8 oz. light cream cheese softened
- ¼ cup salsa
- ¾ cup corn kernels
- ¾ cup black beans
- Chopped green onions topping
- Serve with crackers or fresh vegetables
Preheat oven to 350F.
Beat cream cheese and salsa together until smooth. Stir in shredded cheese, black beans, and corn. Spoon into 1 quart baking dish. Bake for 12-15 minutes. Serve warm with crackers or fresh vegetables.
It can also be served cold.
