Southwestern Cheese Dip

  • 6 oz. shredded cheese I used Cabot Pepper Jack
  • 8 oz. light cream cheese softened
  • ¼ cup salsa
  • ¾ cup corn kernels
  • ¾ cup black beans
  • Chopped green onions topping
  • Serve with crackers or fresh vegetables


  • Preheat oven to 350F.
  • Beat cream cheese and salsa together until smooth. Stir in shredded cheese, black beans, and corn. Spoon into 1 quart baking dish. Bake for 12-15 minutes. Serve warm with crackers or fresh vegetables.
  • It can also be served cold.
