Slightly crispy on the outside and soft on the inside, these sweet potato patties are easy to make, flavorful, and nutritious!

Ingredients
1cupmashed sweet potatoes (240g or 1 1/2 -2 medium)
1cupcooked quinoa (130g)
1/2cupshredded cheese (50g)
1teaspoongarlic powder
1teaspoonoregano
2tablespoonsalmond flour (15g), or any flour of choice

Instructions
Preheat oven to 375 degrees Fahrenheit. Grease a baking sheet or line with parchment paper or silicone baking mat.
In a large bowl combine all the ingredients until well-incorporated. Form into 8 even-sized balls and press down into patties using your palms.
Place on prepared baking sheet and bake for 25-30 minutes, flip halfway through.
Serve with your favorite dip/sauce
Notes
Store in an airtight container for 3-4 days in the refrigerator or in the freezer for up to 3 months.When ready to enjoy, thaw and bake at 350°F for 10-12 minutes. You can also microwave briefly or enjoy cold!
