Add oats to a food processor and give it a good pulse. You can also do this with the nuts if you want them to be finely chopped. Then add the dried fruits and add-ins.
Pulse the mixture until it starts to come together into a sticky dough. If it's too dry, you can add a tablespoon of water at a time until it reaches the desired consistency.
Line a mini loaf pan with parchment paper and press the mixture evenly into the dish to your desired thickness. Place the dish in the fridge for at least an hour to firm up. Once chilled, cut into bars or squares.
