Ingredients
Veggie Hummus Pinwheel Sandwich
1 largesoft tortilla
3-4tablespoonshummus
Matchstick carrots
Sliced Cucumber
Sliced red bell pepper
Chicken Avocado Pinwheels
1large soft tortilla
3-4tablespoonsmashed avocado (or guacamole), see note
2slices of cheese
1/4-1/3cupshredded chicken

Instructions
Layout your tortilla on a clean surface. Evenly spread a layer of your chose spread onto the tortilla
Place the fillings over the spread. Be careful not to overstuff the tortilla to ensure easy rolling.
Carefully start rolling the tortilla from one end, making sure to roll it as tightly as possible without squeezing out the filling.
Optional but recommended - wrap the pinwheel tightly in plastic wrap and refrigerate for at least 30 minutes. You will achieve cleaner cuts and a neater presentation.
Slice seam side down with a serrated knife and enjoy!
Notes
For the avocado spread, add freshly squeezed lemon or lime juice to prevent browning and don't slice the wrap until right before serving or packing into lunchbox.
It is best to wrap the tortilla pinwheel sandwiches individually in plastic wrap. This will prevent them from drying out and help maintain their shape. Store in the fridge for up to 3 days.
