Instructions
Prepare the cream cheese filling: Combine cream cheese and honey or maple syrup in a mixing bowl. Fold in strawberries.
In a shallow dish or casserole dish, whisk together the eggs, milk, vanilla extract, and cinnamon.
Take a slice of bread and spread a generous amount of the strawberry cream cheese filling on one side. Place another slice of bread on top, creating a sandwich. Repeat to make 4 sandwiches.
Heat a skillet or griddle over medium heat and add butter.
Dip the sandwich into the egg mixture for 5 seconds or so, making sure both sides are well-coated. Let the excess drip off and place the stuffed French toast on the skillet and cook until golden brown on both sides, about 2-3 minutes per side. Repeat. Serve immediately with your favorite toppings, such as maple syrup, fresh strawberries, or powdered sugar.

Notes
Use stale or day-old bread! Fresh bread can absorb too much liquid.
Opt for thicker slices of bread as they will have a better chance of holding their structure after soaking in the egg mixture.
Toss in or substitute some more fruity goodness to these strawberry cream cheese French toast sandwiches! Raspberries, blueberries, and blackberries are awesome picks that would pair perfectly with these.
If you've got some French toast left over, just pop it in an airtight container in the fridge. When you're ready to dig in again, just toss them on a skillet or in the oven to reheat!
