One of my favorites has been banana French toast for years. It’s a breeze – just mash some bananas, mix with eggs, dunk the bread, and you’re ready to roll.

Alternatively, I prepare a baked brioche casserole the night before, making it a hassle-free morning as all you need to do is pop it in the oven.

This French toast stuffed with a sweet cream cheese filling and fresh strawberries is the best. It levels up the classic French toast recipe with a few simple steps and ingredients.

This delicious stuffed French toast is ideal for a leisurely brunch when you have a bit more time on your hands. It’s not too complicated, just requires a bit of effort. Plus, it’s a delightful choice for a Valentine’s Day breakfast, Mother’s Day brunch, and other special occasions.

  • Bread – Grab yourself some thick, sturdy, and slightly stale bread that can handle the egg mixture without turning into a mushy mess. Our go-to choices include brioche, challah, French bread, and sourdough – they work like a charm!
  • Eggs – If you don’t want to use eggs, substitute flax eggs instead.
  • Milk – Feel free to use whatever milk you’ve got in your fridge, but I’ve noticed that milk with a bit more fat gives that extra creaminess to the French toast. And if you’re dairy-free, almond or soy milk would be fantastic choices for this recipe!
  • Cream cheese – Don’t forget to grab your cream cheese from the fridge before you kick off this recipe. Let it soften up a bit, making it easier to mix with the other ingredients. Whipped cream cheese would also work for this stuffed French toast.
  • Honey or maple syrup – These add a nice sweetness to this recipe and can be used interchangeably here.
  • StrawberriesFresh strawberries really take this brunch item over the top, but frozen strawberries would also work.

Step-by-Step Instructions

Step 1: Combine cream cheese and honey or maple syrup in a mixing bowl. Fold in strawberries.

Step 2: In a shallow dish or casserole dish, whisk together the eggs, milk, vanilla extract, and cinnamon.

Step 3: Take a slice of bread and spread a generous amount of the strawberry cream cheese filling on one side. Place another slice of bread on top, creating a sandwich. Repeat to make 4 sandwiches.

Step 4: Heat a skillet or griddle over medium heat and add butter. Dip the sandwich into the egg mixture for 5 seconds or so, making sure both sides are well-coated.

Step 5: Let the excess drip off and place the stuffed French toast on the skillet and cook until golden brown on both sides, about 2-3 minutes per side.

Step 6: Repeat.

Tips for Preventing Soggy French Toast

  1. Use stale or day-old bread! Fresh bread can absorb too much liquid.
  2. Opt for thicker slices of bread as they will have a better chance of holding their structure after soaking in the egg mixture.
  3. Preheat your pan or griddle BEFORE dipping the French toast sandwiches. That way you can place them immediately after coating with egg mixture and achieve a crisp exterior.
  4. Dip the bread quickly into the egg mixture rather than letting it soak for a long time.
  5. After dipping the bread in the egg mixture, allow any excess to drip off.
  6. After cooking each French toast sandwich, transfer to a wire rack placed on a baking sheet and keep them warm in a preheated oven. Do NOT stack them on top of each other.

  • Toss in or substitute some more fruity goodness to these strawberry cream cheese French toast sandwiches! Raspberries, blueberries, and blackberries are awesome picks that would pair perfectly with these.
  • If you’re dealing with an egg allergy or cooking for someone who skips eggs for any reason, go for chia eggs or flax eggs in this recipe. They’re great substitutes!
  • Use thick slices of gluten-free bread to make this stuffed French toast recipe gluten-free.

I don’t recommend freezing this.
