“Really quick, really delicious. Everyone loved them.” – Autumn
French toast is an amazing way to take your breakfast to the next level. Not only does it give off an impressive and fancy vibe, but it also needs to be super easy to make to be a go-to choice for those hectic mornings.
One of my favorites has been banana French toast for years. It’s a breeze – just mash some bananas, mix with eggs, dunk the bread, and you’re ready to roll.
Alternatively, I prepare a baked brioche French toast casserole the night before, making it a hassle-free morning as all you need to do is pop it in the oven.
This French toast stuffed with a sweet cream cheese filling and fresh strawberries is the best. It levels up the classic French toast recipe with a few simple steps and ingredients.
Plus, it’s a delightful choice for a Valentine’s Day breakfast, Mother’s Day brunch, and other special occasions.

Key Ingredients

I am highlighting just the ones that need further explanation. The complete list is in the recipe card below.
- Bread – Grab yourself some thick, sturdy, and slightly stale bread that can handle the egg mixture without turning into a mushy mess. See the Best Bread for Stuffed French Toast section below for more tips on choosing the right one.
- Eggs – If you don’t want to use eggs, substitute flax eggs instead.
- Milk – Feel free to use whatever milk you’ve got in your fridge, but I’ve noticed that milk with a bit more fat gives that extra creaminess to the French toast. And if you’re dairy-free, almond or soy milk would be fantastic choices for this recipe!
- Cream cheese – Don’t forget to grab your cream cheese from the fridge before you kick off this recipe. Let it soften up a bit, making it easier to mix with the other ingredients. Whipped cream cheese would also work for this stuffed French toast.
- Honey or maple syrup – These add a nice sweetness to this recipe and can be used interchangeably here.
- Strawberries – Fresh strawberries really take this brunch item over the top, but frozen strawberries would also work. See my guide on strawberries for babies for prep tips.
Best Bread for Stuffed French Toast
Choosing the right bread makes a big difference.
- Brioche or challah – Soft, rich, and ideal for a creamy filling
- Texas toast – Affordable, thick, and sturdy
- Sourdough – Adds structure and a slight tang (best for adults)
Avoid thin sandwich bread. It tears easily and won’t hold the filling well.
Substitutions and Variations
- Toss in or substitute some more fruity goodness to these strawberry cream cheese French toast sandwiches! Raspberries, blueberries, and blackberries are awesome picks that would pair perfectly with these. See this guide to blueberries for babies for safe prep tips.
- If you’re dealing with an egg allergy or cooking for someone who skips eggs for any reason, go for chia eggs or flax eggs in this recipe. They’re great substitutes!
- Use thick slices of gluten-free bread to make this stuffed French toast recipe gluten-free.
- Swap half the cream cheese for Greek yogurt.
- Use dairy-free cream cheese and plant-based milk.
- Arrange dipped sandwiches in a baking dish and bake for a hands-off option.
How to Make Strawberry Stuffed French Toast

Step 1: Combine cream cheese and honey or maple syrup in a mixing bowl. Fold in strawberries.

Step 2: In a shallow dish or casserole dish, whisk together the eggs, milk, vanilla extract, and cinnamon.

Step 3: Take a slice of bread and spread a generous amount of the strawberry cream cheese filling on one side. Place another slice of bread on top, creating a sandwich. Repeat to make 4 sandwiches.

Step 4: Heat a skillet or griddle over medium heat and add butter. Dip the sandwich into the egg mixture for 5 seconds or so, making sure both sides are well-coated.

Step 5: Let the excess drip off and place the stuffed French toast on the skillet and cook until golden brown on both sides, about 2-3 minutes per side.

Step 6: Repeat.

Expert Tips
- Use stale or day-old bread! Fresh bread can absorb too much liquid.
- Opt for thicker slices of bread as they will have a better chance of holding their structure after soaking in the egg mixture.
- Don’t overfill. Too much filling causes leaks.
- Preheat your pan or griddle BEFORE dipping the French toast sandwiches. That way you can place them immediately after coating with egg mixture and achieve a crisp exterior.
- Dip the bread quickly into the egg mixture rather than letting it soak for a long time.
- After dipping the bread in the egg mixture, allow any excess to drip off.
- Cook low and slow to ensure the center warms without burning the outside.
- Use medium heat to avoid raw egg in the middle.
- After cooking each French toast sandwich, transfer to a wire rack placed on a baking sheet and keep them warm in a preheated oven. Do NOT stack them on top of each other.
Substitutions and Variations
- Different fruit: Swap strawberries with finely chopped raspberries, blueberries, or blackberries.
- Egg-free: Use chia eggs or flax eggs (texture will be slightly less custardy).
- Gluten-free: Use thick, sturdy slices of gluten-free bread.
- Lighter filling: Replace half of the cream cheese with Greek yogurt.
- Dairy-free: Use dairy-free cream cheese and unsweetened plant-based milk.
- Hands-off option: Arrange dipped sandwiches in a baking dish and bake until golden and warmed through.
Serving Suggestions

Keep cooked French toast warm on a baking sheet in a 200°F oven while finishing the rest of the batch.
Set up a toppings bar so everyone can customize their plate. Try:
- Whipped cream
- Powdered sugar
- Fresh berries or banana
- Butter
- Chocolate chips
- Maple or strawberry syrup
This pairs beautifully with the perfect scrambled eggs for baby, fruit, or a simple smoothie for a balanced breakfast. Try one of these favorite vegetable fruit smoothies!
Equipment
I love using this electric griddle because I can do multiple sandwiches at once and will fry my stuffed French toast to golden brown perfection. Medium heat is the best for cooking French toast.
Strawberry Stuffed French Toast FAQs
Yes, stale bread slices absorb just the right amount of egg mixture, resulting in a nice balance of crispy on the outside and soft on the inside for your French toast.
If you have soggy French toast, it may be because you are letting the bread sit in the cinnamon egg mixture for too long. You want to dip your bread quickly and put it right onto the hot griddle or skillet.
Yes, but thaw and drain them well to prevent excess moisture.
Absolutely. You can assemble the sandwiches ahead of time or bake them all at once for easy serving.
If you’ve got some French toast left over, just pop it in an airtight container in the fridge, good for up to three days. Store any leftover toppings, like fresh fruit, separately.
When you’re ready to dig in again, just toss them on a skillet or in the oven to reheat!
I don’t recommend freezing this.

Made this on Valentine’s Day last year and my family loved it. Made it the next weekend too!
These came out rich and delicious!! I’d scrolled past this recipe so many times but never tried it, but oh my GOODNESS. So glad I finally did. My toddler ate his like a sandwich, as is. No toppings needed. It’s like strawberry cheesecake between the two layers. Highly recommend if you have an overnight guest and want to treat them to something special.
(Min’s brioche french toast is also to die for. It’s one of my family’s favorite recipes!)
So good! I’m not a hige cream cheese peeson but this was amazing. The baby wouldn’t eat it because he’s been having food aversion to bread with stuff on it but we’ll definitely do this again!
Really quick, really delicious. Everyone loved them.
I’m so happy to hear that!!
