Our trip to New Zealand in October was truly THE most spontaneous trip my husband and I have ever taken. My husband really enjoys organizing and planning for trips, so I normally just sit back and wait until he hands me an itinerary. It’s a hard life, I know. Included in the itinerary is a very detailed play-by-play of our daily activities, places we are staying, restaurants we will be dining at, etc.
Since we decided to go down under on a whim back in September, my meticulous husband didn’t have much time to research. Instead, he delegated it to a travel agent and off we went. In two weeks, we visited both islands and covered a lot of ground in the process. Was it enough time? NO! But then again, I don’t think you could ever have enough time in this magnificent country. And now that we’ve gotten a taste for living “on the edge,” I have a feeling we shall be paying another visit in the near future. Or will we? 😉
Of course, the scenery was just breathtaking (I miss seeing the clear, brilliant blue and green hues everywhere I turn), but the food was pretty unforgettable as well. The big towns were teeming with eclectic cuisine from all around the world. What stood out to me especially was the plethora of sushi restaurants. We also visited the Korea town in Auckland, which felt like a home away from home for us. When traveling, kimchi withdrawal is 100% bound to happen to us Koreans.
In the smaller towns, I got to enjoy some incredibly juicy and flavorful grass-fed beef, fresh seafood, plenty of fresh vegetables, and my personal favorite - the world’s creamiest cheese and yogurt! And how can I forget the warm sticky fig pudding...

Kiwi Ginger Smoothie Bowl w/Hokey Pokey
Ingredients:
- 1 serving of vanilla Kura
- ¼ cup almond milk, unsweetened plain
- ½ banana
- ½ cup roughly chopped jicama
- 1 in. piece ginger, peeled and grated
- 1 teaspoon honey
- ½ lime juice
- Toppings: hokey pokey (I used this recipe), fresh kiwi slices, chia seeds
Sticky Fig Pudding Smoothie Bowl
Ingredients:
- 3 dried figs
- 1 packet of chocolate Kura
- ¼ cup oats
- 1 teaspoon honey
- ½ orange + 1 teaspoon orange zest
- ½ teaspoon cinnamon
- Toppings: shredded coconut, almonds or walnuts, a drizzle of caramel sauce or maple syrup
Simply blend everything together in a blender. If the consistency is too thin, blend in some ice cubes. Transfer to a bowl, add toppings, and enjoy with a spoon!
