Key Ingredients

All the ingredients laid out on a desk.

I am highlighting just the ones that need further explanation. The complete list is in the recipe card below.

  • Pumpkin puree – Canned pumpkin makes this recipe easy while adding moisture and plenty of pumpkin flavor. Use canned pumpkin puree, not pumpkin pie filling, since pie filling is pre-sweetened and spiced. Homemade puree works too.
  • Old-fashioned rolled oats – Old-fashioned oats work best, giving the baked oatmeal its hearty texture and helping it hold together once baked. Quick oats go mushy, and steel-cut oats won’t soften in time.
  • Greek yogurt – Helps make the oatmeal soft and moist while adding protein and a creamy texture.
  • Pumpkin pie spice – A blend of cinnamon, nutmeg, ginger, and cloves that brings classic fall flavor in one shake.
  • Chia seeds – Adds fiber and healthy fats while blending easily into the oatmeal. I love using this Brain Booster superseed blend for little ones.

Substitutions

  • Greek yogurt – For the best texture, I recommend Greek yogurt as written. If you need to avoid dairy, use a thick dairy-free yogurt that you have tested in baked oatmeal.
  • Maple syrup – For a less-sweet baked oatmeal, you can reduce the maple syrup. Keep in mind that maple syrup contributes both sweetness and moisture, so larger reductions may change the final texture.

Expert Tips

  • Use rolled oats for the best texture – Old-fashioned rolled oats bake into soft, sliceable pieces while still holding a hearty texture. Stick with them over steel-cut unless you’ve tested a different ratio.
  • Don’t skip the cooling time – The oatmeal will look soft right out of the oven. Cooling for 10–15 minutes lets the oats absorb the remaining moisture and firms up the pieces.
  • Check your pumpkin – Use plain canned pumpkin puree, not pumpkin pie filling, which already contains sweeteners and spices that would change the flavor.
  • Chop the nuts finely for younger eaters – For babies or young toddlers, skip larger pecan pieces. Finely chop or grind them, or use a smooth nut or seed butter instead.
  • Let everyone choose their toppings – This baked oatmeal is lightly sweet on its own, so toppings are an easy way to customize it: Greek yogurt, nut or seed butter, fresh fruit, or a splash of milk.

This pumpkin baked oatmeal is delicious warm with:

  • Plain Greek yogurt

For younger children, keep the toppings simple and choose textures that match their current eating and feeding skills.

Pumpkin Baked Oatmeal FAQs

Can I make pumpkin baked oatmeal ahead of time?

Yes. Pumpkin baked oatmeal works well as a make-ahead breakfast. Bake it according to the recipe, allow it to cool, then portion it into individual servings for easy breakfasts throughout the week.

How should I store pumpkin baked oatmeal?

Once completely cooled, store the baked oatmeal in an airtight container in the refrigerator for up to 5 days.

How do I reheat baked oatmeal?

Reheat an individual serving in the microwave until warmed through. If it seems dry after refrigeration, add a splash of milk before or after reheating. You can also serve it with yogurt or fruit to add moisture.

Can I freeze pumpkin baked oatmeal?

Yes. Allow the baked oatmeal to cool completely, then portion it into individual servings and freeze in an airtight freezer-safe container. Thaw overnight in the refrigerator and reheat before serving.

Can I use quick oats instead of rolled oats?

I recommend old-fashioned rolled oats for this recipe because they provide the intended texture and structure. Quick oats absorb liquid differently and may produce a softer, less hearty baked oatmeal.

Can I make this pumpkin baked oatmeal dairy-free?

You can use your favorite dairy-free milk. Greek yogurt is also part of the recipe’s texture, so if you need the recipe to be completely dairy-free, use a thick dairy-free yogurt that you know works well in baked oatmeal.
