This Beef and Broccoli Rice Cooker Meal is a game-changer for busy families! It combines protein, veggies, and grains all in one pot with minimal prep and cleanup. Simply toss everything into the rice cooker, press a button, and let it do the work.

Rice Cooker Meal

One-pot rice cooker meals are a lifesaver for those days when you’re juggling a million things and cooking feels like the last thing you have energy for.

With just a few ingredients and the press of a button, you’ve got a delicious, wholesome meal ready with minimal effort. It’s the ultimate back-pocket meal that gives you the comfort of home-cooked food without the hassle!

This Beef and Broccoli Rice Cooker Meal is one of our go-to weeknight dinners because my kids absolutely love it, especially when served as a lettuce wrap with kimchi. It’s also a good option for kids who aren’t fond of broccoli. The broccoli becomes soft during cooking, making it easy to blend with the rice and beef.

Ingredients

I am highlighting just the ones that need further explanation. The complete list is in the recipe card below.

  • Rice – Long grain rice won’t be as sticky, but you can use it if that’s your preference.
  • Beef – Choose lean cuts like flank steak or sirloin, and slice thinly against the grain for tender, easy-to-chew bites. I like to use shabu shabu meat from Costco
  • Broccoli – I don’t recommend using frozen broccoli as it will get too mushy upon cooking.
  • Beef Broth: Use low-sodium broth. It will add extra flavor to the rice as it cooks.
  • Soy Sauce: Use low-sodium to control salt levels. It provides the main seasoning and balances the savory flavors.
  • Oyster Sauce – Adds a rich, slightly sweet depth to the dish, but you can skip it if you prefer a lighter flavor
  • Sesame Oil – Just a small amount adds a nutty, toasty aroma that complements the beef and veggies
  • Cornstarch (optional): A slurry of cornstarch and water can be stirred in at the end to create a thicker sauce if you prefer a saucier dish.

Substitutions

  • Swap out beef with chicken or tofu for a vegetarian twist.
  • Vegetables: feel free to add whatever vegetables you have on handcauliflower, green beans, snow peas, frozen mixed vegetables, carrots…they will all work.
  • Tamari or Coconut Aminos: Use tamari for a gluten-free option or coconut aminos for a soy-free alternative.
  • Hoisin Sauce: Adds a sweeter, richer flavor. It can replace or complement oyster sauce.

Step-by-Step Instructions

Step 1: Rinse the Rice: Start by rinsing the rice thoroughly under cold water until the water runs clear. This helps remove excess starch and ensures fluffier rice.

Step 2: Add the rinsed rice to the rice cooker. Pour in the broth, then add the soy sauce, oyster sauce, sesame oil, and minced garlic. Stir everything together.

Step 3: Place the beef on top of the rice, followed by the broccoli florets.

Step 4: Close the lid and set the rice cooker to the ‘White Rice’ or ‘Cook’ setting, depending on your model. Once done, fluff the rice, mixing it with the beef and broccoli. Serve hot, garnished with sesame seeds and chopped green onions if desired.

Recipe Tips

  • Cooking times can vary between rice cookers, so it’s best to use the ‘white rice’ or ‘normal’ setting for best results.
  • The broccoli will become quite soft if cooked with the rice, so if you prefer it to have more texture, you can cook it separately and mix it in once the rice is done.

Best Rice Cooker to Use

  • Tayama Rice Cooker with Steam Tray 8 Cups, White (RC-8R): This model includes a steam tray and has a simple cook setting, making it a convenient and straightforward choice for making this meal without the need for fancy or complicated features.
  • Zojirushi Neuro Fuzzy Rice Cooker: Known for its advanced “fuzzy logic” technology, which adjusts cooking times and temperatures for perfect rice every time. The “white rice” setting is ideal for this recipe.
  • Cuckoo CR-0631F Rice Cooker: A great choice for Korean-style rice cookers, it has multiple settings and is particularly good for cooking both short-grain and medium-grain rice, which works well for this dish.
  • Aroma Housewares Digital Rice Cooker: An affordable option with a built-in steamer function, it’s versatile for families who want to cook rice, meats, and vegetables simultaneously.

Serving Suggestions

  • Pair with crunchy seaweed snack.
  • Add a side of kimchi or pickled vegetables for a tangy, spicy kick.
  • Serve with a refreshing cucumber salad or steamed edamame for more veggies.
  • Enjoy as lettuce wraps for a fun, hands-on meal.

Storage

This hearty one-pot rice cooker meal will feed a family of four. If you happen to have any leftovers, store in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop until warmed through.

Super easy to make. Ended up doubling the recipe. My toddler loved it. My husband and I thought it was a little bland so we ended up adding a little more salt to ours and added red pepper flakes. Delicious!

Delicious and so, so easy. I’m kind of shocked. I’d double the amount of beef and broccoli next time, but this is really good. So good and easy I’m eating for the first time haha. Thank you!!

    1. Hi! One of my community recipe testers said it didn’t work using rice setting. She said the flavor ward really good but the rice was a bit mushy. What I recommend trying is to use high pressure for 2 minutes then natural release for 10 minutes. Let me know how it turns out!
