The hubby and I went to the Go Texan Food Truck Challenge that took place at the South 1st Food Court. The 5 food trucks (Bananarchy, Blue Dog Pizza, Bufalo Bob's Chalupa Wagon, Lard Have Mercy, and Nettie's Place) battled it out to determine who could create the most delicious and original recipe using Texas ingredients. Fun, eh?
The judges got to taste all the entries before the public. Being the curious one that I am, I asked Bufalo Bob, the event's MC, who the judges were. Apparently, most of them were food bloggers. Hopefully I can be sitting where they were sometime in the future :). A girl can hope, right?
The judges' final verdict...drum roll please...the chicken and sausage gumbo by Nettie's Place!
So a little info about the different trucks:
- Bananarchy- Build your own frozen banana stand. The bananas are dipped (chocolate, pb, vanilla, or vegan chocolate) and topped (nuts, oreos, toffee, coconut, cookie, coffee bean, and much more) as you wish. God bless them! After all the savory foods, a sugar fix was def in order!
- Blue Dog Pizza- Serves gourmet stone-baked pizza. I tried the frito pie pizza, which was def unique and a favorite at our table.
- Bufalo Bob's Chalupa Wagon- Specializes in range fed all natural Bison (you know how much I love me some bison!!), chicken, and vegetarian chalupas. Gluten free options were also available! I had the Cordoba which had hummus, flax seed, bison, onion, spinach, tomato, and parmesan cheese. Nom Nom Nom! The hummus was the star. I learned later that it was made using Texas beer. No wonder I liked it ;).
- Lard Have Mercy- I actually didn't try any food from this one. As you might've guessed from the name, their menu centers around bacon and pork flavors. Tim tried the Wilbur's Balls - homemade chili balls dipped in cornbread batter, deep fried, and served with a jalapeño cheese sauce. He was surprised that they weren't as heavy as they sounded.
- Nettie's Place- Serves cajun comfort food. The Atchafalaya Poboy was out of this world! It had fried catfish served on french bread and topped with tomato, lettuce, and tartar sauce. At first I didn't think I would like it bc I don't like foods drenched in sauce. But this one was def a winner in my book. The tartar sauce was actually quite light and refreshing, and the catfish was so meaty! Yum!

Honestly, I wish I had some Korean sweet potatoes on hand when I made these...But they don't last very long around here.

The food truck experience looks like fun! I've been to one in Atlanta and they had great food and a fun atmosphere 🙂 I'm glad you've been able to get back in the gym, classes are my favorite!

It's been really great! The instructors are all so amazing! The barbell strength class today was so awesome! I just have to make sure to feed and fuel my body properly!!

You're so lucky you were able to participate in the Food Truck Challenge and taste all those yummy eats. If I could only choose one of these if would definitely be Bananarchy-you had me at bananas and chocolate lol. What's the herbal medicine btw?

I know! I'm so glad I was able to go!! Those two ingredients were meant for each other!!
I actually have hypothalamic amenorrhea...I've been taking herbal medicine twice a day for about a month now. And just two weeks ago, I got my period which went missing for about a year and a half. I also made a lot of lifestyle changes and gained about 10 Ibs. Therefore, I can't say that the medicine was the sole reason for the return of the cycle. But I'm pretty certain that it helped a great deal! I'm going to continue taking it for 2 more months. Doesn't taste so great...

I'm happy to hear a change of lifestyle is working for you. Herbal medicines are incredible, even if they only play a small part in healing 🙂 Others may beg to differ, but what works for one may not necessarily work for another, right?! My body is also going through something at the moment, my physician has sent me for soooo many tests in the last 6 months..I meet with him on Tuesday next week for more results..hopefully I can start the healing process once I know.

Thank you! And I agree! Everybody's body is different and therefore needs it's important to experiment and find what works for you! It's such a wonderful feeling when your body finally responds in a positive way to whatever changes you're making :). Oh, I'm so sorry for all the pain and the waiting that you're enduring. I hope that you'll get the feedback you need to move forward in healing your body! Not knowing and waiting, for what seems like an eternity, is the worst part, isn't it? You're in my prayers, Maria!

The Go Texas Food Truck Challenge sounds like such a fun (and delicious) way to spend a Saturday afternoon! I love the Bananarchy concept; chocolate-covered bananas are pretty amazing. And I bet they're even more wow-worthy topped with toffee, coconut and coffee beans!
I laughed when I read "Lard Have Mercy." Haha! Lard isn't the word I'd want my customers to attach to my food if I was in the truck food business. Too funny!
I agree with you about the camaraderie (or competitiveness) of working out with others; it really helps motivate me! I have full faith that you'll be able to stick to your moderation goal--just stay honest with yourself and you'll do just fine. <3 xoxo

Im not a pork eater but i love the name "Lard Have Mercy" - haha! Everything sounds so yummy especially the frozen banana and pizza trucks! And I so feel you about being nicer after a workout- my exercise is more for the benefit of those around me ha ha!!
