Saturday morning started out with a little jog around the neighborhood.  It actually felt really good to incorporate some cardio back into my life!  And I didn't go overboard like I used to.  I listened to my body and stopped when it told me that it was tired.  It was a lovely morning, indeed.  Then, the three of us headed out to the farmer's market for a family outing.  There sure was an abundance of squash and melons!  Our fridge is now stocked with freshness, and I'm one happy mama ;).

As you can see, Kona was just lovin' on all creatures!  He's such a social butterfly.  Oh, and do you see my larger than life Rachel Ray blue tote?  But no worries!  It was completely stuffed with wholesome goodness by the time we got through. Tim's more than eager to come along on Saturdays for this reason...

Austin is full of food trucks, and at least one of them always comes and adds an extra flare to the market.  These trucks are so much fun!  The menus are often very interesting and brilliantly creative!  Oftentimes, the flavor components seem so strange, but these mad scientists in these tiny mobile kitchens somehow make it all work beautifully.  Tim tried the Japajam, which included tomato jam, shoestring onion rings, all beef patty, fried egg, and Japanese BBQ sauce.  I opted out this time.  I know... I'm a party pooper.  But honestly, I just wanted a PB & J sandwich that was waiting for me at home.  I did have a bite, and it sure was deliciously interesting.  I never had a sweet burger before.

The three of us had a great time!  Kona passed out as soon as we got home.  Socializing takes a lot outta ya for sure!

Couple weeks ago, I saw a Groupon deal for a 3 course meal for two at Hudson's on the Bend.  It's one of those restaurants that everyone raves about around here!  The place was voted in the top 50 restaurants in America by Conde Nast Traveler Magazine!  It was a no-brainer.  My finger couldn't click the purchase button fast enough!  So here we are on our date... With the most beautiful man and feasting on...

Worthy of mention:  Do you see the lovely flower garnish on my steak?  It sure wasn't on TIm's plate.  It's little moments like this that makes me glad that I'm a woman :).

One word..PERFECTION!  There was absolutely nothing left on our plates by the time we got through.  The waiter must've thought we had been starved for days.

    Ahh...good times, good times!

It was a very gloomy day on Sunday as it rained on and off.  I had to study so it all worked out well.  Way to think positive, right?

And if you're wondering why today is an important day, it's bc...I'm taking my citizenship test!!  The whole process has been pretty drawn out.  I first had to send in the application along with $650!!  Then, I went in to do the finger printing.  And now I'm taking the test.  This whole process has taken about 4 months.  I hope I pass the first time around!  It's been a long time since I took U.S history, my friends.

Well, I better get goin.  I've got a 3 hour drive ahead of me.  Could it be any farther?

    Question:

Have you eaten at any food trucks?  What's the craziest thing(s) you've tried and what was the name of the truck?

The peached tortilla is great - they have amazing bahn mi tacos. I'm a food truck connoisseur in Austin. I love your blog! This is going to be sort of creepy, but I'm in your agriculture class and I randomly stumbled onto your blog in class today from Nourish and Flourish. I was like Oh Taste the Rainbow that sounds delicious, and then I was like wait hey she looks familiar, but anyways I'm Lindsay and I sit in the back row of class.

Your weekend sounds perfect! I love food trucks, and occasionally hit DC's Friday Food Truck Fiesta with my friends. Even though the trucks park around the city all week long, once a month, they all come together (20-30 of them!) for one big food party! It's always so difficult to choose which truck to eat from. 😉 Tim's Japajam sounds delicious. I'm a huge fan of combining flavors that aren't usually paired together. And those onion rings...yum!

Hudson's on the Bend sounds amazing--so glad you had a fun date night! I love the flower garnish on your steak. 🙂

Good luck on your citizenship test! I'm sending US History knowledge vibes your way! xoxo <3

Haha! You're so cute!! I was wondering where all this extra knowledge was mysteriously coming from ;). Thanks, girl! And what do you know? I passed!! woohoo!!

And I agree with you! The hardest part is picking which truck to try! Thankfully, they are cheap which means I get to try multiple trucks. But usually, my tummy fills up before my wallet runs dry :(.
Hope you're having a marvelous Monday!!

I've never seen anything like that at a food truck! I love to get cotton candy or something sweet from food trucks...usually at a fair or something! I hope you pass your test girl! Let me know how it goes!

Thanks, Lauren! The drive was horrendous, and of course I got lost..But I passed! That's what's important :). Now, just one more thing left to do - take an oath. Hopefully I won't have to wait too long.

Oh goodness. There are tons of food trucks but any kind of Korean-Mexican mix is always insane. Maybe a sriracha cheesecake from Dos Chinos?
