  • Tomatoes – you’ll need cherry or grape tomatoes for this recipe. They are more flavorful than the larger tomatoes and will be easier to combine with the sauce once cooked.

  • Boursin cheese – Not a fan? try this cream cheese pasta instead.
  • Garlic – use fresh for maximum garlic flavor. After roasting, it smashes easily with the tomatoes and cheese, adding a delicious punch to your dish!
  • Pasta – feel free to use any of your favorite pasta, including gluten-free pasta. While any pasta shape will work, I prefer the short pasta shapes with ridges and grooves, like fusili, corkscrew, and rigatoni.
  • Fresh spinach (optional) – I’m always looking for ways to veggie load recipes and baby spinach works really well in this pasta dish. You can even add broccoli, zucchini, asparagus, etc. If you do, be sure to roast alongside the tomatoes.
  • Fresh basil – for brightness and a pop of color.

Step-by-Step Instructions

  1. Preheat oven to 400°F. Place the cherry tomatoes and garlic in a 13×9 inch baking dish. Place the boursin cheese in the middle of the dish. Pour olive oil on top and give everything a good toss. Bake for 25-30 minutes, until the tomatoes burst and the cheese softens.
  2. Meanwhile, cook pasta until al dente. Drain, reserving 1/2-3/4 cup of pasta water.
  3. Remove from the baking dish from the oven and add the basil and spinach. Smash the roasted tomatoes, garlic, and cream cheese with the back of a spoon until creamy.
  4. Add the cooked pasta and stir well. Add some pasta water to thin out the mixture until desired consistency is reached.
  5. Sprinkle some parmesan cheese, freshly grated black pepper, or red pepper flakes, if you prefer, and enjoy!

    Super easy! Kids aren’t a fan of the tomatoes though. My 5 year old still gave it a go and ate it but my 1 year old said no. Boo haha
