I had tons of fun developing the recipe for this one. Instead of the creamy mushroom soup from a can, I made a vegan miso sauce thickened with cashews.

Cauliflower was a great way to "sneak" in an extra vegetable and some additional flavor while cutting down the amount of stock/liquid needed as it provided plenty of moisture.

Haha that's exactly what I said! But then I think it would help narrow down my impulsive selections.
