Table of Contents
Ingredients

I am highlighting just the ones that need further explanation. The complete list is in the recipe card below.
- Hummus – Store-bought classic and roasted red pepper hummus work perfectly, but if you have time, homemade is always a fun option! Try this carrot hummus, broccoli hummus, beet hummus, or pumpkin seed spinach hummus for a twist!
- Chicken – I prefer to use chicken breast but feel free to use chicken thighs instead.
- Smoked Paprika – Adds a subtle smoky depth that complements the hummus beautifully.
- Bell Peppers – Peppers bring color and flavor to the dish. Let the kids pick their favorite colors!
Substitutions and Variations
- Vegetables – Feel free to use whatever you have on hand or you love. If you’re using root vegetables or heartier veggies that take longer to cook—like sweet potatoes, Brussels sprouts, broccoli, or carrots—add them at the beginning with the chicken and cook for 25-30 minutes. This way, everything will be perfectly tender!
- Hummus – There are so many different hummus flavors available, so feel free to experiment! Check out the ingredients section above for some creative ideas to try.
- Protein – Swap chicken breasts for thighs, salmon fillets, tenders, or bite-sized chunks for kids. Adjust cooking time slightly, and enjoy the same delicious results!
Step-by-Step Instructions

Step 1: Place the chicken breasts in sheet pan and coat both sides with olive oil. Combine the seasonings in a small bowl and sprinkle each piece on both sides.

Step 2: Spread a generous layer of hummus over the top of each chicken. Bake in the oven for 15 minutes.

Step 3: Meanwhile, chop the vegetables and toss with oil and seasonings.

Step 4: After 15 minutes, scatter the prepared vegetables around the chicken, squeeze some lemon juice over the chicken, then return the dish to the oven and bake for an additional 10-15 minutes.
Recipe Tips
- Season Before Adding Hummus: it will give an extra layer of flavor that shines through in every bite.
- Slice Veggies Evenly: Cut your vegetables into uniform sizes to ensure even cooking. This way, everything will be perfectly tender at the same time.
- Adjust Cooking Time for Thickness: If you’re using chicken thighs or if your chicken breasts are particularly thick, you might need to increase the cooking time slightly. Always check for doneness with a thermometer.
- Finish with Fresh Herbs: A sprinkle of fresh parsley or basil at the end adds a burst of color and fresh flavor that really brightens up the dish.
Serving Suggestions

This Baked Hummus Chicken is a complete meal on its own, but you can round it out with:
- Bread – A side of warm pita bread or naan for scooping up the creamy hummus and roasted veggies.
- A Salad – A simple green salad or a Mediterranean-style salad with cucumbers, tomatoes, and feta complements this meal perfectly..
- A Side – A scoop of fluffy quinoa, rice, or couscous for added carbs.
- Kid-Friendly Touch – Add a side of fruit like apple slices or grapes to round out the plate.
Storage
Once cooled, transfer leftovers into an airtight container and refrigerate for up to 4 days. To reheat, warm in the oven at 350°F until heated through or microwave on low heat to avoid drying out the chicken.
FAQ
Yes! You can season the chicken up to a day ahead. Store them in the fridge, then assemble and bake when ready.
This is a dish I would not recommend freezing. Hummus can change texture after being frozen and thawed, potentially becoming grainy or separating. The roasted veggies may also lose their tender-yet-crispy texture, becoming mushy when reheated.
Definitely! Made from chickpeas, tahini, and olive oil, hummus is rich in protein, fiber, and healthy fats. It’s a flavorful and wholesome addition to meals, offering plenty of nutrients in every bite.
Cooking times can vary depending on the size of the chicken breasts. Use a meat thermometer to ensure they reach an internal temperature of 165°F. If needed, return them to the oven for a few more minutes.

This chicken was very moist and tasty. Diffinitley a keeper.
Made this dinner for the family and we all enjoyed it. So delicious! Not too complicated, the chicken was wonderful and the veggies were so good. Will definitely add this to our rotation.
Yay! Thanks for sharing!
So delicious! We had extra chicken breast and wasn’t sure what to make. Glad I saw this recipe! We haven’t used hummus this way before but it will now work its way into the dinner rotation. We used red pepper hummus which was delicious. We had less chicken than what the recipe called for but extra hummus is never bad! Perfect combination with the veggies too.
