Ingredients

Homemade Fajita Seasoning

In a small bowl, mix together:

  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoons ground cumin
  • 1/2 teaspoon garlic powder

You can choose to mix the chicken and vegetables together on the sheet pan, but separating them, as seen here, can be helpful if your child prefers their foods not mixed. Drizzle oil evenly over both the chicken and the vegetables. Sprinkle the seasoning blend also. Toss everything until well coated.

Step 2: Place the sheet pan in the preheated oven. Roast for 20-25 minutes, stirring halfway through, until the chicken is fully cooked (internal temperature sure read ) and the vegetables are tender.

  • Prep Ingredients Properly: Slice your chicken, bell peppers, and onions into uniform sizes. This ensures that everything cooks evenly and at the same rate.
  • Meal prep tip: For a super fast weeknight meal, slice your bell peppers, onions, and chicken in advance and store in separate airtight containers in the refrigerator.
  • Season Generously: Don’t skimp on the seasoning. A mix of chili powder, cumin, garlic powder, onion powder, and paprika can be great. Adding lime juice and a little salt and pepper before cooking can also enhance the flavors.
  • Don’t Overcrowd the Pan: Spread the chicken and vegetables in a single layer without overcrowding the pan. This exposure to the heat helps in achieving those desirable roasted edges rather than steaming the ingredients.

Even though I use my sheet pans ALL the time, whether it’s roasting vegetables or making various kid-friendly baked goods, I never thought to look into a high-quality one, partly because I didn’t think it’d make that much difference.

Equipment

Ingredients 

  • 1 pound chicken breast or thigh, sliced into 1/2 inch strips
  • 3 bell peppers – red, yellow, and green, sliced into thin strips
  • 1 red onion, sliced thinly
  • 3 tablespoons olive oil
  • 2 tablespoons chicken seasoning or fajita seasoning (see notes section)
  • 8 flour tortillas

Fajita Toppings

  • Sour cream, guacamole, cheese, salsa, lime juice, cilantro

Instructions 

  • Preheat oven to 400°F. Grease or line a large rimmed baking sheet with parchment paper for easy cleanup.
  • Place the sliced chicken on one side of the sheet pan. Arranged the vegetables on the other side of the pan. Drizzle oil evenly over both the chicken and the vegetables. Sprinkle the seasoning blend also.
  • Use your hands or a pair of tongs to toss everything together on the pan, making sure the ingredients are well coated. Arrange in a single layer to ensure even cooking. Make sure the chicken isn't overlapping too much, which helps it get a nice roast rather than steam.
  • Place the sheet pan in the preheated oven. Roast for 20-25 minutes, stirring halfway through, until the chicken is fully cooked (internal temperature sure reads 165°F) and the vegetables are tender.
  • Remove from the oven. Squeeze some lime juice and sprinkle with freshly chopped cilantro, if desired.
