HAPPY NEW YEAR!!
The last 2 weeks of 2014 were very good to me, indeed. While I normally get into a really contemplative, “leave me alone so I can reflect on the year that’s quickly leaving us” mode this time of the year, I didn’t get the chance for any of that this Christmas season. My parents were back in the States, so the majority of my time was spent reconnecting with family in Houston (recaps of Christmas ’12 and Christmas ’13).
It sure has been a while since all of us were together, and although there were some hairy episodes and moments calling for personal space, many precious and unforgettable memories were made, as well.

From left to right: my lil’ brother, big sis, brother in law, most adorable nephew, Tim
BTW, is it weird that I slept in the same bed with my lil’ brother for a week while Tim was with his family? I didn’t think so ;). I put forth my best effort to unplug from technology over the holiday. Aside from checking my Instagram on occasion, I think I did pretty darn well, I must say. However, I do wish I had taken more pictures and regret letting my laziness get the best of me.

Thanks to my more diligent father, here are a few scenes from Christmas Day. We spent the afternoon at Moody Gardens, a place my family is all too familiar with. I can’t even begin to count the number of trips that were made here over the course of my childhood. So while there was nothing new to see, it was fun to experience it through the eyes of my ecstatic and fascinated 2 year old nephew, Noah. Oh, there was something new – Ice Land. Unfortunately, all I can remember is how painfully frigid it was despite the parkas we were all required to wear. I couldn’t wait to get out! And just like that, Christmas came and went.

On the 28th, Tim surprised me with a mini getaway to the Lost Pines Resort and Spa, just the two of us. And while I actually complained (spoiled and ungrateful, I know), it was the greatest idea ever! I guess my body finally got the hint that it could freely relax as I slept, literally, 10 hours every day (probably could’ve slept more!). With no agenda, we simply enjoyed each other’s company.

only in Texas…

Don’t mind the shirt…he’s still a lil’ boy at heart

The last sunset of 2014
While part of me is still trying to hold onto 2014, I’m excited to see what the new year has in store. I better get working on setting some realistic and motivational goals.
And to all of you who’ve been following our adventure, thank you so much for all the support and encouragement that you’ve so generously poured out on us. I can’t wait to share more healthy, easy, and delicious recipes as well as nutritious tips with you this year. But first, here are my top recipes from 2014 according to stats.

Korean Spicy Chicken and Potatoes
Loaded Southwestern Quinoa Sweet Potatoes
Roasted Cauliflower, Tomatoes, Chickpeas with Indian Spices

Wow – what a special time you had with your family over the holidays. (I think it’s funny that you ask that because my friends and I have had lots of debates about whether it’s weird for a grown woman to sleep in the same QUEEN-sized bed next to her dad when he comes to visit. I think not! Same goes for your lil’ bro:). I’m really looking forward to trying your pumpkin and kale pasta bake (actually, all of these recipes!). I am continually impressed by your creativity, personal stories, and beautiful photos (seriously – can you look at the magazine-worthy spread of thumbnails at the bottom of this page?!?!).
Haha that reminds me..I suffered from terrible insomnia during my college years, and my dad came to take me out of campus to “de-stress” me. So we stayed at a nearby hotel for several days (same room..king size bed). Long story short, his plan was not successful. His snoring was..omg…I ended up sleeping in the tub haha. ahh the memories..And I truly appreciate your continuous support and encouragement! Love ya! xoxo
Happy new year, Min! I’m glad you got some time to unplug and recharge (and ironic combination, no?)! Can’t wait to see what you have in store for 2015 🙂
I am not good with surprises so I totally understand why you might not have wanted to go on the surprise trip, it’s like hello, it wasn’t in my plans! The things our sweet men do for us 🙂
