Ingredients

  • Banana – Choose bananas that are ripe but still firm. They should have a few brown spots and still hold their shape well.
  • Peanut butter – you want it to be runny so it is best to use natural peanut butter.
  • Yogurt – this is optional but it provides a delicious boost of nutrition and flavor. My kids love the addition!
  • Additional toppings (optional) – feel free to add some chocolate chips, crushed nuts, granola, or shredded coconut on top.

Step 1: Peel and slice bananas into thick rounds, about 1/2 inch thick. add a spoonful of peanut butter to the bottom of each muffin cup. Spread it out evenly to form a base layer.

Step 4: Spoon a dollop of yogurt on top of each banana slice and spread to cover the muffin cup entirely (note: I am using a very thick Greek yogurt. You can also use cottage cheese if you like it!). Sprinkle optional toppings like chocolate chips, crushed nuts, granola, or shredded coconut on top of the yogurt layer. Freeze for at least 2-3 hours.

Recipe Tips

  • If using yogurt, choose a thicker variety (like Greek yogurt) to prevent it from becoming too runny. If it’s too liquid, it might not set properly.
  • I highly recommend using a silicone muffin pan for easy removal of the banana bites.

  • Peanut Butter: Feel free to experiment with different nut butters (like almond or cashew), sunflower seed butter or different fruits for variety.
  • Texture: If you prefer a softer texture, take the bites out of the freezer a few minutes before serving.
  • If using yogurt, try these homemade flavored yogurts for an additional boost of flavor and sweetness.

    Can you store these in the fridge after they have frozen for 2 – 3 hours?

    I left mine in the freezer for around 6 hours and we can’t bite into them ooops!

    I’ve not put them in the fridge but wasn’t sure how long they’d keep in the fridge.

    1. Hi!! These are so good, aren’t they? I recommend taking out of the freezer and letting it sit at room temperature for several minutes should soften. You can refrigerate but not for long!

    This one is such a hit in our house! We top some with chocolate chips and some with sprinkles so they feel like a treat to my daughter, she calls them “cupcakes”. We love them because it’s an easy and healthy way to get her some extra protein!

    One note, my daughter has a peanut allergy so we use sun butter. Sun butter does not freeze apparently, so the first time I made this it was a mess! But now we put a layer of yogurt down first and sandwich the sun butter in between and it works great!
