Quick & easy, healthy, and portable microwave breakfast cake for one. It can be made ahead of time as well.Microwave Breakfast Cake for One

Ever have one of those mornings when you want something savory? If so, may I tempt you with this savory yogurt bowl or Greek quinoa breakfast bowl? Of course, there are those mornings, though, when you wake up with nothing but a cake or cookie on the mind. I know I do. While I do try to honor my cravings, I also know that for me personally, starting out the day on a sugar rush always seems to set me up for making a lot of poor food choices throughout the day. Rather than completely deprive myself, I searched for ways I could have my cake and eat it too.

And I finally found it! Say hello to my microwave breakfast cake for one ;). Since I've got a million things to do before I walk out the door for work (I see you nodding your head), not only does my first meal of the day have to be tasty with lots of wholesome ingredients, it also needs to be quick and easy. What I like to do is make several of these on Sunday evening so that when the craziness starts to unravel in the days ahead, I can simply put my breakfast cake batter in the microwave for about 1 - 1 ½ minutes and dig in. Now, I say breakfast, but these would also make for great snacks as well!

      Min,

As someone who is usually on-the-go first thing in the morning, this looks great. The peanut butter breakfast cake stood out to me. I LOVE peanut butter. You can never go wrong with that!

Such a cute idea Min! I love it- and I agree, as much as I love a giant cinnamon roll I always crash shortly after. Good thing this lets me have my cake and eat it too!

Lady these look so good! My mornings have become a lot less rushed lately since I stopped working to go back to nutrition school but I will need to find part time work soon so that may be changing!
